Potato Salad

Ingredients

  • 4 cups cooked potatoes

  • 1 1/2 cups chopped celery

  • 1/2 cup green onions

  • 1/4 cup finely chopped radishes

  • 2 tablespoons chopped parsley

Dressing

  • 1 cup mayonnaise

  • 1 tablespoon vinegar

  • 2 teaspoon yellow mustard

  • 1/2 teaspoon celery seed

  • 1 1/2 to 2 teaspoon salt

  • 1/8 teaspoon pepper

Directions

  • In at least 24 hours before serving, wash and boil potatoes until fork tender. Drain and let potatoes cool.

  • Combine chopped vegetables and refrigerate. Combine dressing ingredients and refrigerate.

  • Peel and dice potatoes and combine in a large bowl with chopped vegetables and dressing.
