Potato Salad
Ingredients
4 cups cooked potatoes
1 1/2 cups chopped celery
1/2 cup green onions
1/4 cup finely chopped radishes
2 tablespoons chopped parsley
Dressing
1 cup mayonnaise
1 tablespoon vinegar
2 teaspoon yellow mustard
1/2 teaspoon celery seed
1 1/2 to 2 teaspoon salt
1/8 teaspoon pepper
Directions
In at least 24 hours before serving, wash and boil potatoes until fork tender. Drain and let potatoes cool.
Combine chopped vegetables and refrigerate. Combine dressing ingredients and refrigerate.
Peel and dice potatoes and combine in a large bowl with chopped vegetables and dressing.
